
Roasted mushrooms are one of the easiest ways to add rich, savory flavor to your meals. When you roast mushrooms, their natural moisture releases and their flavors concentrate, giving you tender, meaty mushrooms with incredible depth.

Ingredients
- 2 pounds fresh mushrooms (any variety, or a mix)
- ¼ cup olive oil
- Salt & pepper
- Optional: fresh herbs like thyme, rosemary, or parsley
Instructions
Step 1: Clean the Mushrooms (if needed)
Our mushrooms do not need to be cleaned. If you are using wild mushrooms or button, gently brush off any dirt using a mushroom brush or wipe them with a damp cloth. Avoid rinsing under running water—mushrooms absorb moisture easily, which can make them soggy when roasted.
Step 2: Prep and Cut
Tear or slice mushrooms into similar-sized pieces to help them cook evenly. Smaller mushrooms can be left whole.
Step 3: Season
In a large bowl, toss the mushrooms with olive oil, a generous pinch of salt, and freshly ground black pepper. Make sure every piece is lightly coated.
Step 4: Arrange on the Baking Sheet
Spread the mushrooms in a single layer on a rimmed baking sheet. With 2lbs of mushrooms, it’s best to use two baking sheets or roast in batches to keep them from crowding. If mushrooms are too close together, they’ll steam instead of roast.
Step 5: Roast and Drain
Roast mushrooms in a 375°F oven for 15 minutes.
Halfway through, carefully drain the liquid released from the mushrooms into a heatproof container. (Save it—it’s packed with mushroom flavor and perfect for soups, grains, or sauces.)
Step 6: Finish Roasting
Return the pan(s) to the oven and continue roasting for another 25–30 minutes, stirring once or twice. The mushrooms should shrink, deepen in color, and develop some golden edges.
Step 7: Add Herbs and Serve
Once roasted, toss the mushrooms with fresh chopped herbs if desired. Taste and adjust seasoning if needed. Serve immediately, or let them cool completely to store for later.
