1. Herby Lobster Mushroom Risotto

Ingredients (Serves 4)

  • 1 lb fresh lobster mushrooms, cleaned and diced
  • 1 ½ cups arborio rice
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (kept warm)
  • 1 cup dry white wine
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
